Makes one 9-inch loaf
½ cup vegetable oil
1 cup (7 ounces) granulated sugar
2 large eggs
1 cup grated unpeeled zucchini
1 ½ cups (6 ¾ ounces) all-purpose flour
1 ½ teaspoons cinnamon
¾ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
Zest from 1 lemon
Optional add-ins:
• golden raisins or other dried fruit
• fresh blueberries
• chocolate chips
Preheat the oven to 350°F. Grease a 9x5x3-inch loaf pan and set aside.
In a medium bowl, stir together the oil and sugar. Next beat in the eggs one at a time, mixing well after each addition. Stir in the grated zucchini.
In a smaller bowl, sift together the flour, cinnamon, baking soda, baking powder, and salt. Add the flour mixture to the zucchini mixture, stirring until well combined. Stir in the lemon zest and any other optional goodies, like raisins.
Pour the batter into the prepared pan and bake for 45 to 55 minutes, or until done.
Remove the bread from the oven and let cool slightly, then turn out of the pan to continue cooling.
