I am a huge fan of beans, whether as an entrée such as Pasta e Fagioli or an appetizer. The drawback to using dried beans is that you need to plan ahead and remember to soak them overnight, for at least 12 hours in some instances.

1. Place the beans in a pan and add water to cover the beans by 2 inches. Cover the pan, place over high heat and bring to a boil. Remove beans from the heat and let stand, covered, for 1 hour.
2. Rinse the beans with cold water and then cook according to the recipe.
