Makes 4 servings
6 ounces arugula
2 tablespoons extra-virgin olive oil
2 tablespoons minced shallot
Kosher salt and freshly ground black pepper, to taste
½ cup red seedless grapes, cut in half
1 large ruby red grapefruit
¼ cup whole smoked almonds, roughly chopped
With a small knife, cut each end off of the grapefruit. Cut the peel off the grapefruit by cutting down the sides of the grapefruit, making sure to remove all of the pith. Next, cut out each section of the grapefruit, leaving the membrane in between each section. You should have nice slivers or wedges of grapefruit. Set aside.
In a medium bowl, toss the arugula with the olive oil, shallot, salt, and pepper. Divide the arugula among individual salad plates, or place on one larger serving plate. Garnish with the grapes, grapefruit sections, and almonds. Serve.
